These are always well-loved. They are time-consuming and the recipe below makes enough to eat for a large crowd or two meals with some leftover to freeze. I only make them once a year, almost always during Christmas break, when we are making fresh sausage, cabbage is plentiful and the weather is cold and dreary. Filling:

Bacon Wrapped Asparagus BundlesThese bundles can be easily prepared on an outdoor grill or in a hot oven.
Ingredients
Directions Preheat oven, if using, to 400 degrees F. Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients. To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender. For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes. Source: Rachel Ray Ziti Casserole with Sausage and GreensYes, use the greens and if you have to, you can hide them from your children and they will never know that they are in there. With this recipe I recommend using the kale, but spinach would do nicely too. Also, whenever I make a casserole I double it and stick one in the freezer to have an easy weeknight dinner. Preheat the oven to 350. Grease an 9 x 11 baking dish. Brown sausage, garlic and onion, (I did not drain, but if you are conscious of the fat feel free too).Add wine to sausage mixture, cook for 5 minutes, stir in tomatoes, basil, salt and red pepper flakes if using. Reduce heat to low and cook for 5 minutes. Meanwhile, cook pasta, drain, while pasta is hot add kale or spinach, mozzarella, and ricotta. Transfer to baking dish. Top with sausage mixture. Sprinkle with Parmesan cheese, remaining mozzarella cheese, and some chopped parsley.
Bake at 350 for 25 – 30 minutes or until bubbly and gooey on top! Eat, stay warm and enjoy! |
