The summer vegetables are the ones I used that I had available at the time. You may use any summer vegetable that you like! Nothing fresh? Can corn and canned tomatoes work too!

Heat oil in a large pot, stir in onions and garlic until soft. Stir in broth, chicken, black beans, tomatoes, corn, salsa, and chilli powder. Cook until simmering. To thicken soup: add the cornstarch to a small bowl; stir in water, until mixture is smooth. Stir in soup and simmer for 10 minutes. Whisk sour cream and 1 cup of soup together in a small bowl until smooth, add back to soup and stir. Stir in lime juice and cilantro. Serve. 😋 Make it even better by topping with fresco cheese, tortilla chips, sliced jalapeños and sliced avocados!
Brown ham or sausage in a large soup pan. Add onions, carrots, celery to mixture, cook about 5 minutes until veggies are wilted. Add seasonings, tomato paste, chicken broth and simmer 30 minutes. Add cabbage, kale and pasta. Simmer another 20 minutes. Add chicken stock or tomato juice if you want more broth in soup. Serve with grated Parmesan on top and crusty thick bread.

Last night for Meatless Monday we made Vegetarian chili and creamy cornbread muffins. It was perfect for the dreary day. I can honestly say, I liked it better than a meaty, heavy chili. The bulgar in the stew gave it texture without heaviness. Don't let the long list of ingredients intimidate you; it was easy!

Homemade Chicken Stock:
Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, salt and peppercorns in a large stockpot. Add 7 quarts of water and bring to a boil. Lower the heat and simmer uncovered for 4 – 5 hours. Skim off any foam that comes to the top. Let cool. Strain the entire pot through a colander and discard the solid. You may refrigerate for up to 5 days or freeze for 6 months. |
